Description

A flavorful Mediterranean Baked Fish recipe featuring white fish fillets topped with a vibrant mix of vegetables and herbs.

Ingredients

  • 2 (6-ounce) white fish fillets (such as cod or tilapia)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, arrange the fish fillets side by side. Season them with salt and pepper.
  3. In a bowl, combine the cherry tomatoes, olives, red onion, garlic, oregano, parsley, olive oil, and lemon juice. Mix well.
  4. Pour the vegetable mixture over the fish fillets, ensuring they are evenly covered.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is cooked through.
  6. Remove from the oven and let it rest for a few minutes. Serve with lemon wedges on the side.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the vegetable mixture.
  • Feel free to substitute the fish with salmon or another firm fish of your choice for a different flavor profile.
