Ingredients
- 2 (6-ounce) white fish fillets (such as cod or tilapia)
- 1 cup cherry tomatoes, halved
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup red onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
- 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried parsley)
- 2 tablespoons olive oil
- 1 lemon, juiced
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, arrange the fish fillets side by side. Season them with salt and pepper.
- In a bowl, combine the cherry tomatoes, olives, red onion, garlic, oregano, parsley, olive oil, and lemon juice. Mix well.
- Pour the vegetable mixture over the fish fillets, ensuring they are evenly covered.
- Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork and is cooked through.
- Remove from the oven and let it rest for a few minutes. Serve with lemon wedges on the side.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the vegetable mixture.
