This quick and vibrant Mediterranean stir fry is packed with juicy tomatoes, crisp bell peppers, tender spinach, and hearty ground beef—all brought together with garlic, herbs, and a touch of feta. It’s a weeknight-friendly one-pan meal that’s rich in flavor, light on carbs, and ready in 30 minutes.


Ingredients

  • 1 tablespoon olive oil

  • 1 red bell pepper, deseeded and diced

  • 1 pint cherry tomatoes, halved

  • 8 ounces baby spinach

  • 4 garlic cloves, minced

  • 2 green onions, thinly sliced (white and green parts separated)

  • 1 pound ground beef

  • ½ teaspoon dried oregano

  • Kosher salt, to taste

  • Freshly ground black pepper, to taste

  • 2 tablespoons crumbled feta cheese


Instructions

  • Cook the vegetables:
    Heat olive oil in a large skillet over medium-high heat. Add red bell pepper and cherry tomatoes. Sauté for 4–5 minutes until the tomatoes begin to blister and soften.

  • Add aromatics:
    Stir in garlic and the white parts of the green onions. Cook for 1 minute, just until fragrant—don’t let the garlic brown.

  • Wilt the spinach:
    Add spinach to the pan and cook, stirring, for 2–3 minutes until wilted. Transfer the vegetables to a plate and set aside.

  • Cook the ground beef:
    In the same skillet, add ground beef. Season with dried oregano, salt, and black pepper. Cook for 6–8 minutes, breaking it up into crumbles, until browned and fully cooked. Drain excess fat if needed.

  • Combine and finish:
    Return the cooked vegetables to the skillet. Stir in the green parts of the green onions and cook for 1–2 minutes to warm everything through.

 

  • Serve:
    Remove from heat and sprinkle with crumbled feta before serving. Enjoy warm as-is or serve over rice, quinoa, or in lettuce wraps.

Notes

  • Want extra zest? Add a squeeze of lemon juice or a sprinkle of sumac before serving.
