Mediterranean Lemon Chicken with Artichokes and Olives delights your taste buds with its vibrant flavors and healthy ingredients.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1 lemon, juiced and zested
  • 1 cup chicken broth
  • 1 can (14 ounces) artichoke hearts, drained and quartered
  • 1/2 cup pitted Kalamata olives, halved
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, salt, black pepper, garlic powder, oregano, paprika, lemon juice, and lemon zest. Add the chicken thighs and toss to coat evenly.
  3. Heat a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs and sear for about 4-5 minutes on each side until golden brown.
  4. Pour in the chicken broth, then add the artichoke hearts and olives around the chicken in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  6. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the marinade.
  • Serve over a bed of quinoa or with a side of roasted vegetables for a complete meal.
