Ingredients
- 2 pounds boneless, skinless chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1 lemon, juiced and zested
- 1 cup chicken broth
- 1 can (14 ounces) artichoke hearts, drained and quartered
- 1/2 cup pitted Kalamata olives, halved
- 1/4 cup fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, salt, black pepper, garlic powder, oregano, paprika, lemon juice, and lemon zest. Add the chicken thighs and toss to coat evenly.
- Heat a large oven-safe skillet over medium-high heat. Once hot, add the chicken thighs and sear for about 4-5 minutes on each side until golden brown.
- Pour in the chicken broth, then add the artichoke hearts and olives around the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the marinade.
- Serve over a bed of quinoa or with a side of roasted vegetables for a complete meal.
