Mediterranean Oven-Baked Cabbage Burgers are a delicious and healthy twist on traditional burgers, featuring a flavorful filling wrapped in tender cabbage leaves.
Ingredients
- 1 small head of green cabbage (about 2 pounds)
- 1 pound ground turkey or chicken
- 1 cup cooked quinoa
- 1/2 cup feta cheese, crumbled
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 large egg
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- Remove the core from the cabbage and carefully separate the leaves. Blanch the leaves in boiling water for about 2-3 minutes until they are slightly softened. Drain and set aside to cool.
- In a large mixing bowl, combine the ground turkey or chicken, cooked quinoa, feta cheese, parsley, red onion, garlic, oregano, salt, black pepper, red pepper flakes (if using), and egg. Mix until well combined.
- Take a blanched cabbage leaf and spoon about 1/4 cup of the meat mixture into the center. Fold the sides over the filling and roll it up tightly. Place the cabbage burger seam-side down on the prepared baking sheet. Repeat with the remaining leaves and filling.
- Drizzle the olive oil over the cabbage burgers. Bake in the preheated oven for 25-30 minutes, or until the meat is cooked through and the cabbage is slightly crispy.
- Let the burgers cool for a few minutes before serving. Enjoy them warm or at room temperature.
