This Mediterranean Salmon Bake is a flavorful, nutrient-rich dinner that’s as vibrant as it is simple. Flaky salmon is topped with a savory mix of wilted spinach, sun-dried tomatoes, red onion, and crumbled feta, then optionally finished with a drizzle of pesto. Ingredients

1 (2-lb) salmon filet

1 tablespoon avocado oil

1 teaspoon sea salt

1 teaspoon garlic powder

1/2 red onion, finely chopped

1 (8.5-oz) jar sun-dried tomatoes, drained and chopped

5 oz baby spinach

6 oz feta cheese crumbles

1/3 cup pesto sauce (optional)
Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and place the salmon filet on top. Drizzle with avocado oil and brush evenly. Sprinkle with sea salt and garlic powder.

Bake the salmon in the center of the oven for 10 minutes.

While the salmon bakes, heat a small skillet over medium heat with a little avocado oil. Sauté the chopped red onion for 5–8 minutes until softened.

Add the sun-dried tomatoes and spinach to the skillet. Cover and cook until the spinach wilts.

Stir in the feta cheese and cook just until it starts to melt into the spinach mixture.

Remove the salmon from the oven and spread the spinach topping evenly over the filet. Return to the oven and bake for an additional 8–10 minutes, or until the salmon reaches an internal temperature of 145°F.

Optional: Drizzle with pesto sauce before serving. Let rest for a few minutes, then serve warm.
