Description
Mediterranean Spinach and Feta Crisps are delicious, flaky parcels filled with a savory mixture of spinach, feta, and ricotta cheese, perfect for a snack or appetizer.
Ingredients
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup all-purpose flour
- 1 large egg
- 1 tablespoon olive oil
- 1 package (8 oz) phyllo dough, thawed
- Cooking spray or additional olive oil for brushing
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the chopped spinach, feta cheese, ricotta cheese, Parmesan cheese, garlic powder, onion powder, black pepper, salt, and red pepper flakes. Mix well until all ingredients are combined.
- In a separate bowl, whisk together the flour, egg, and olive oil until smooth. Gradually fold this mixture into the cheese and spinach mixture until fully incorporated.
- Lay out one sheet of phyllo dough on a clean surface and lightly spray with cooking spray or brush with olive oil. Place another sheet on top and repeat the process until you have 3 sheets layered.
- Cut the layered phyllo dough into squares (about 4×4 inches). Place a spoonful of the spinach and cheese mixture in the center of each square.
- Fold the corners of the phyllo dough over the filling to create a small parcel. Pinch the edges to seal. Repeat with the remaining phyllo and filling.
- Place the parcels on the prepared baking sheet and lightly brush the tops with olive oil or cooking spray.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
Notes
- For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.
- Add chopped sun-dried tomatoes or olives to the filling for an extra burst of Mediterranean flavor.
