2 tablespoons olive oil
-
2 tablespoons fresh dill, chopped
-
Salt and pepper, to taste
For the Salad:
-
2 cups cooked chicken, chopped
-
2 cups romaine lettuce, chopped
-
1 cup grape tomatoes, halved
-
1/2 cup pepperoncini peppers, sliced
-
1/2 cup Kalamata olives, sliced
-
1/4 cup red onion, chopped
-
1/2 cup feta cheese, crumbled
Instructions
-
In a small bowl, combine Greek yogurt, grated cucumber, pressed garlic, olive oil, and chopped dill. Mix well. Season with salt and pepper to taste. Chill for 10 minutes to allow flavors to develop.
-
In a large salad bowl, combine chopped romaine, grape tomatoes, pepperoncini, olives, and red onion.
-
Add the chopped cooked chicken on top of the salad.
-
Spoon generous amounts of the chilled tzatziki over the salad.
-
Sprinkle crumbled feta over everything. Serve immediately or chill slightly before serving.
Notes
-
Rotisserie chicken or grilled marinated chicken works great in this salad.
-
For extra crunch, add toasted pita chips or croutons on top.
-
Swap in goat cheese for feta if you prefer a milder tang.
-
This salad holds well for meal prep — just store the tzatziki separately and add before serving.
