Description

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 medium carrot, diced
  • 1 medium potato, peeled and diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup green olives, sliced
  • 1/4 cup raisins
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and carrot. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
  4. Stir in the diced potatoes, diced tomatoes (with their juice), green olives, raisins, cumin, chili powder, salt, and pepper.
  5. Reduce the heat to low, cover, and let simmer for about 20-25 minutes, or until the potatoes are tender, stirring occasionally.
  6. Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
