Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 medium bell pepper, diced
- 1 medium carrot, diced
- 1 medium potato, peeled and diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/2 cup green olives, sliced
- 1/4 cup raisins
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the diced onion, bell pepper, and carrot. Sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain any excess fat.
- Stir in the diced potatoes, diced tomatoes (with their juice), green olives, raisins, cumin, chili powder, salt, and pepper.
- Reduce the heat to low, cover, and let simmer for about 20-25 minutes, or until the potatoes are tender, stirring occasionally.
- Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add diced jalapeños or a pinch of cayenne pepper.
- Substitute ground turkey or chicken for a leaner option, or use a plant-based ground meat for a vegetarian version.
