Description

Ingredients

  • 2 large yellow onions
  • 1 cup long-grain rice, rinsed
  • 1 pound ground beef or lamb
  • 1/2 cup pine nuts, toasted
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups chicken or vegetable broth
  • Juice of 1 lemon
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. Cut the tops off the onions and carefully scoop out the insides, leaving about 1/4 inch of the onion shell. Finely chop the scooped-out onion and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 5 minutes.
  4. Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  5. Stir in the rice, pine nuts, parsley, cinnamon, allspice, salt, black pepper, and raisins (if using). Cook for another 2-3 minutes, allowing the flavors to meld.
  6. Stuff each onion shell with the meat and rice mixture, packing it tightly. Place the stuffed onions upright in a baking dish.
  7. Pour the chicken or vegetable broth around the onions and drizzle the lemon juice over the top. Cover the dish with aluminum foil.
  8. Bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 15-20 minutes, until the onions are tender and the tops are slightly browned.
  9. Let cool for a few minutes before serving.

  • For a vegetarian version, substitute the ground meat with cooked lentils or chickpeas.
  • You can also add spices like cumin or coriander for extra flavor.
