Ingredients

- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 6 cups vegetable broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (15-ounce) can kidney beans, rinsed and drained
- 1 (15-ounce) can corn, drained
- 1 cup frozen green beans
- 1 cup uncooked pasta (small shapes like ditalini or elbow)
- Salt to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, carrots, celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
- Add the dried thyme, dried basil, black pepper, and red pepper flakes (if using). Stir to combine and cook for 1 minute until fragrant.
- Pour in the vegetable broth and add the diced tomatoes, kidney beans, corn, and frozen green beans. Bring the mixture to a boil.
- Once boiling, add the uncooked pasta and reduce the heat to a simmer. Cook for about 10-12 minutes, or until the pasta is tender.
- Taste and adjust seasoning with salt as needed.
- Serve hot, garnished with fresh parsley.
