  • 1 (15-ounce) can kidney beans, rinsed and drained
  • 1 (15-ounce) can corn, drained
  • 1 cup frozen green beans
  • 1 cup uncooked pasta (small shapes like ditalini or elbow)
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the minced garlic, carrots, celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
  3. Add the dried thyme, dried basil, black pepper, and red pepper flakes (if using). Stir to combine and cook for 1 minute until fragrant.
  4. Pour in the vegetable broth and add the diced tomatoes, kidney beans, corn, and frozen green beans. Bring the mixture to a boil.
  5. Once boiling, add the uncooked pasta and reduce the heat to a simmer. Cook for about 10-12 minutes, or until the pasta is tender.
