Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup crushed pineapple, drained
- 1/4 cup heavy cream
- 1/4 cup caramel sauce (for drizzling)
- Fresh pineapple slices (for garnish, optional)
Instructions
- Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press about 1 tablespoon of the crumb mixture into the bottom of each muffin cup to form the crust. Bake for 5 minutes, then remove from the oven and let cool slightly.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition.
- Gently fold in the crushed pineapple and heavy cream until just combined.
- Pour the cream cheese mixture over the cooled crusts in the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until the edges are set and the centers are slightly jiggly.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to set.
- Before serving, drizzle with caramel sauce and garnish with fresh pineapple slices if desired.
