Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup crushed pineapple, drained
  • 1/4 cup heavy cream
  • 1/4 cup caramel sauce (for drizzling)
  • Fresh pineapple slices (for garnish, optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  3. Press about 1 tablespoon of the crumb mixture into the bottom of each muffin cup to form the crust. Bake for 5 minutes, then remove from the oven and let cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  6. Add the eggs one at a time, mixing well after each addition.

  10. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours to set.
  11. Before serving, drizzle with caramel sauce and garnish with fresh pineapple slices if desired.
