Ingredients

  • 2 medium eggplants, sliced in half lengthwise
  • 3 tablespoons white miso paste
  • 2 tablespoons maple syrup
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon minced garlic
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, ginger, and garlic until smooth.
  3. Place the eggplant halves cut-side up on the prepared baking sheet. Brush the miso mixture generously over the cut sides of the eggplants.
  4. Drizzle the vegetable oil over the eggplants, then sprinkle with a pinch of salt.
  5. Roast in the preheated oven for 25-30 minutes, or until the eggplants are tender and the tops are caramelized.
  6. Remove from the oven and let cool for a few minutes. Garnish with sliced green onions and sesame seeds before serving.
