Ingredients
- 2 medium eggplants, sliced in half lengthwise
- 3 tablespoons white miso paste
- 2 tablespoons maple syrup
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon vegetable oil
- 1 teaspoon grated fresh ginger
- 1 teaspoon minced garlic
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- In a small bowl, whisk together the miso paste, maple syrup, soy sauce, rice vinegar, sesame oil, ginger, and garlic until smooth.
- Place the eggplant halves cut-side up on the prepared baking sheet. Brush the miso mixture generously over the cut sides of the eggplants.
- Drizzle the vegetable oil over the eggplants, then sprinkle with a pinch of salt.
- Roast in the preheated oven for 25-30 minutes, or until the eggplants are tender and the tops are caramelized.
- Remove from the oven and let cool for a few minutes. Garnish with sliced green onions and sesame seeds before serving.
Notes
- For a spicier kick, add a teaspoon of sriracha or chili paste to the miso glaze.
- To make this dish vegan, ensure the maple syrup is pure and not blended with any animal products.
