Description

Mississippi Mud Cake is a rich and decadent chocolate cake topped with a creamy frosting, perfect for chocolate lovers.

Ingredients

  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped walnuts (optional)
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the granulated sugar and softened butter until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips and walnuts, if using. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
  7. For the frosting, beat together the softened butter, powdered sugar, cocoa powder, milk, and vanilla extract until smooth and creamy.
  8. Once the cake is completely cooled, spread the frosting evenly over the top. Cut into squares and serve.

Notes

  • For a richer flavor, add a teaspoon of espresso powder to the batter.
  • Substitute the walnuts with pecans or omit them entirely for a nut-free version.
