Mississippi Mud Cake is a rich and decadent chocolate cake topped with a creamy frosting, perfect for chocolate lovers.
Ingredients
- 2 cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup chopped walnuts (optional)
- For the frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, cream together the granulated sugar and softened butter until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and walnuts, if using. Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely in the pan.
- For the frosting, beat together the softened butter, powdered sugar, cocoa powder, milk, and vanilla extract until smooth and creamy.
- Once the cake is completely cooled, spread the frosting evenly over the top. Cut into squares and serve.
Notes
- For a richer flavor, add a teaspoon of espresso powder to the batter.
- Substitute the walnuts with pecans or omit them entirely for a nut-free version.
