Ingredients

  • 1 cup unsalted butter, plus extra for greasing
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • For the frosting:
  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter and set aside.
  2. In a large mixing bowl, melt 1 cup of butter in the microwave or on the stovetop. Once melted, add granulated sugar and brown sugar, mixing until well combined.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the chocolate chips and mini marshmallows. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  7. While the cake is baking, prepare the frosting. In a medium saucepan, melt 1/2 cup of butter over low heat. Remove from heat and whisk in powdered sugar, cocoa powder, milk, and vanilla extract until smooth.
