Description
Mississippi Mud Cake is a rich, chocolatey dessert that combines a fudgy cake with a creamy frosting, often topped with marshmallows and chocolate chips.
Ingredients
- 1 cup unsalted butter, plus extra for greasing
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- For the frosting:
- 1/2 cup unsalted butter
- 2 cups powdered sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter and set aside.
- In a large mixing bowl, melt 1 cup of butter in the microwave or on the stovetop. Once melted, add granulated sugar and brown sugar, mixing until well combined.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the chocolate chips and mini marshmallows. Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- While the cake is baking, prepare the frosting. In a medium saucepan, melt 1/2 cup of butter over low heat. Remove from heat and whisk in powdered sugar, cocoa powder, milk, and vanilla extract until smooth.
- Once the cake is done, remove it from the oven and let it cool for about 10 minutes. Pour the frosting over the warm cake, spreading it evenly.
- Let the cake cool completely before slicing into squares.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the batter.
- You can substitute the chocolate chips with white chocolate or peanut butter chips for a different twist.
