Description
A delicious and hearty Mushroom Lasagna with Spinach and Cheese, perfect for a comforting meal.
Ingredients
- 8 ounces lasagna noodles
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 16 ounces mushrooms, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 10 ounces fresh spinach
- 15 ounces ricotta cheese
- 1 large egg
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 3 cups marinara sauce
Instructions
- Preheat the oven to 375°F.
- Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Add the sliced mushrooms, oregano, basil, salt, and pepper. Cook until the mushrooms are tender and any liquid has evaporated, about 8-10 minutes.
- Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.
- In a mixing bowl, combine the ricotta cheese, egg, and a pinch of salt and pepper. Mix until well blended.
- Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
- Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the mushroom and spinach mixture. Sprinkle with 1 cup of mozzarella cheese.
- Repeat the layers: noodles, remaining ricotta mixture, remaining mushroom and spinach mixture, and another cup of mozzarella cheese.
- Top with the final layer of noodles, the remaining marinara sauce, and the remaining mozzarella and Parmesan cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
- Let it cool for 10 minutes before slicing.
Notes
- For a creamier texture, consider adding a layer of béchamel sauce between the layers.
- You can substitute zucchini or eggplant for the mushrooms for a different flavor profile.
