Description

A delicious and hearty Mushroom Lasagna with Spinach and Cheese, perfect for a comforting meal.


Ingredients

  • 8 ounces lasagna noodles
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 16 ounces mushrooms, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 10 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 large egg
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups marinara sauce

Instructions

  1. Preheat the oven to 375°F.
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the sliced mushrooms, oregano, basil, salt, and pepper. Cook until the mushrooms are tender and any liquid has evaporated, about 8-10 minutes.
  6. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.
  7. In a mixing bowl, combine the ricotta cheese, egg, and a pinch of salt and pepper. Mix until well blended.
  8. Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
  9. Layer 3 lasagna noodles over the sauce. Spread half of the ricotta mixture over the noodles, followed by half of the mushroom and spinach mixture. Sprinkle with 1 cup of mozzarella cheese.
  10. Repeat the layers: noodles, remaining ricotta mixture, remaining mushroom and spinach mixture, and another cup of mozzarella cheese.
  11. Top with the final layer of noodles, the remaining marinara sauce, and the remaining mozzarella and Parmesan cheese.
  12. Cover the baking dish with aluminum foil and bake for 25 minutes.
  13. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  14. Let it cool for 10 minutes before slicing.

Notes

  • For a creamier texture, consider adding a layer of béchamel sauce between the layers.
  • You can substitute zucchini or eggplant for the mushrooms for a different flavor profile.
