A delicious recipe for Mussels Pasta in a Garlic Sauce, featuring fresh mussels and a light garlic-infused sauce.
Ingredients
- 8 ounces spaghetti or linguine
- 1 pound fresh mussels, cleaned and debearded
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup white wine (such as Sauvignon Blanc)
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Lemon wedges for serving
Instructions
- Cook the spaghetti or linguine according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant but not browned.
- Pour in the white wine and bring to a simmer. Add the cleaned mussels to the skillet, cover, and cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that do not open.
- Add the drained pasta to the skillet with the mussels. Toss to combine, adding reserved pasta water a little at a time to create a light sauce. Season with salt and pepper to taste.
- Stir in the chopped parsley and remove from heat. Serve immediately with lemon wedges on the side.
Notes
- For a creamier sauce, add 1/4 cup of heavy cream to the skillet after adding the pasta.
- Substitute mussels with shrimp or scallops for a different seafood flavor.
