A delicious and easy-to-make No-Bake Apple Pie Cheesecake that combines the flavors of apple pie and cheesecake without the need for baking.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 8 ounces cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 teaspoon ground cinnamon
- 2 cups diced apples (about 2 medium apples)
- ½ cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1 tablespoon water
Instructions
- In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Refrigerate for 30 minutes to set.
- In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spread the cream cheese mixture over the chilled crust, smoothing the top with a spatula. Refrigerate for at least 4 hours or until set.
- While the cheesecake sets, prepare the apple topping. In a medium saucepan over medium heat, combine diced apples, brown sugar, lemon juice, cinnamon, cornstarch, and water. Cook for about 5-7 minutes, stirring occasionally, until the apples are tender but not mushy. Remove from heat and let cool.
- Once the cheesecake is set, top it with the cooled apple mixture. Slice and serve chilled.
Notes
- For a caramel twist, drizzle caramel sauce over the top before serving.
- To make it even more festive, add chopped nuts like pecans or walnuts to the apple topping.
