A refreshing and healthy no-bake pie made with blueberries and chia seeds, perfect for a light dessert.
Ingredients
- 1 ½ cups fresh or frozen blueberries
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
- 1 ½ cups coconut milk (canned or carton)
- ½ cup chia seeds
- 1 teaspoon vanilla extract
- 1 pre-made graham cracker pie crust (9-inch)
- Fresh blueberries and mint leaves for garnish (optional)
Instructions
- In a medium saucepan over medium heat, combine the blueberries, honey (or maple syrup), and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the blueberries start to break down and release their juices. Remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the coconut milk, chia seeds, and vanilla extract until well combined.
- Pour the blueberry mixture into the chia seed mixture and stir until everything is evenly incorporated.
- Let the mixture sit for about 10 minutes to allow the chia seeds to absorb some liquid and thicken.
- Pour the blueberry chia mixture into the pre-made graham cracker pie crust, spreading it evenly.
- Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set properly.
- Once set, slice the pie and serve chilled, garnished with fresh blueberries and mint leaves if desired.
Notes
- For a creamier texture, blend the blueberry mixture before combining it with the chia seeds.
- Substitute the coconut milk with almond milk or yogurt for a different flavor profile.
