Ingredients

  • 2 tablespoons honey or maple syrup

  • 1 ½ cups coconut milk (canned or carton)
  • ½ cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 pre-made graham cracker pie crust (9-inch)
  • Fresh blueberries and mint leaves for garnish (optional)

Instructions

  1. In a medium saucepan over medium heat, combine the blueberries, honey (or maple syrup), and lemon juice. Cook for about 5-7 minutes, stirring occasionally, until the blueberries start to break down and release their juices. Remove from heat and let cool slightly.
  2. In a large mixing bowl, whisk together the coconut milk, chia seeds, and vanilla extract until well combined.
  3. Pour the blueberry mixture into the chia seed mixture and stir until everything is evenly incorporated.
  4. Let the mixture sit for about 10 minutes to allow the chia seeds to absorb some liquid and thicken.
  5. Pour the blueberry chia mixture into the pre-made graham cracker pie crust, spreading it evenly.
  6. Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set properly.
  7. Once set, slice the pie and serve chilled, garnished with fresh blueberries and mint leaves if desired.
