A delightful No-Bake Funfetti Oreo Icebox Cake that combines creamy whipped Funfetti filling with layers of Oreo cookies and rainbow sprinkles.
Ingredients
- 2 cups heavy whipping cream
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 package (15.35 ounces) Funfetti cake mix (dry)
- 1 package (14.3 ounces) Oreo cookies
- 1 cup rainbow sprinkles
- 1 cup milk
Instructions
- In a large mixing bowl, whip the heavy cream until soft peaks form.
- Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- In a separate bowl, combine the dry Funfetti cake mix with the whipped cream, folding gently until well mixed.
- Pour the milk into a shallow dish. Dip each Oreo cookie briefly in the milk, ensuring they are soaked but not falling apart.
- In a 9×13 inch baking dish, layer half of the dipped Oreo cookies on the bottom.
- Spread half of the Funfetti whipped cream mixture over the cookies, then sprinkle half of the rainbow sprinkles on top.
- Repeat the layers with the remaining dipped Oreo cookies, Funfetti mixture, and rainbow sprinkles.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
- Slice and serve chilled.
Notes
- For a chocolate twist, use chocolate Oreo cookies instead of regular Oreos.
- You can also add a layer of chocolate syrup between the layers for extra flavor.
