A delightful No-Bake Funfetti Oreo Icebox Cake that combines creamy whipped Funfetti filling with layers of Oreo cookies and rainbow sprinkles.


Ingredients

  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 package (15.35 ounces) Funfetti cake mix (dry)
  • 1 package (14.3 ounces) Oreo cookies
  • 1 cup rainbow sprinkles
  • 1 cup milk

Instructions

  1. In a large mixing bowl, whip the heavy cream until soft peaks form.
  2. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  3. In a separate bowl, combine the dry Funfetti cake mix with the whipped cream, folding gently until well mixed.
  4. Pour the milk into a shallow dish. Dip each Oreo cookie briefly in the milk, ensuring they are soaked but not falling apart.
  5. In a 9×13 inch baking dish, layer half of the dipped Oreo cookies on the bottom.
  6. Spread half of the Funfetti whipped cream mixture over the cookies, then sprinkle half of the rainbow sprinkles on top.
  7. Repeat the layers with the remaining dipped Oreo cookies, Funfetti mixture, and rainbow sprinkles.
  8. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  9. Slice and serve chilled.
