Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans
  • 1 cup semi-sweet chocolate chips
  • 1 pre-made chocolate cookie crust (9-inch)

Instructions

  1. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the powdered sugar and mix until well combined.
  2. In a separate bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  3. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until smooth. Allow to cool slightly before folding into the cream cheese mixture.
  4. Add the shredded coconut and chopped pecans to the mixture, folding gently to combine.
  5. Pour the cheesecake filling into the pre-made chocolate cookie crust, spreading it evenly.
  6. Refrigerate for at least 4 hours, or until set. For best results, chill overnight.
  7. Before serving, garnish with additional coconut and pecans if desired.
