Description
No Bake Turtle Mini Cheesecakes are a delicious and easy treat featuring a creamy cheesecake filling, a graham cracker crust, and topped with caramel and pecans.
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup caramel sauce, plus extra for drizzling
- 1/2 cup chopped pecans, toasted
- 1/4 cup chocolate sauce, for drizzling
Instructions
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture evenly into the bottom of 12 cupcake liners placed in a muffin tin to form the crust. Set aside.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until well combined.
- Spoon the cheesecake mixture evenly over the prepared crusts in the muffin tin.
- Drizzle caramel sauce over the top of each cheesecake and sprinkle with chopped pecans.
- Refrigerate for at least 4 hours or until set.
- Before serving, drizzle with additional chocolate sauce and caramel sauce.
Notes
- For a chocolate crust, substitute half of the graham cracker crumbs with chocolate cookie crumbs.
- Add a layer of melted chocolate on top of the cheesecake before adding the caramel and pecans for an extra chocolatey treat.
