Description

No Bake Turtle Mini Cheesecakes are a delicious and easy treat featuring a creamy cheesecake filling, a graham cracker crust, and topped with caramel and pecans.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1/2 cup chopped pecans, toasted
  • 1/4 cup chocolate sauce, for drizzling

Instructions

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  2. Press the mixture evenly into the bottom of 12 cupcake liners placed in a muffin tin to form the crust. Set aside.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  4. Gradually add powdered sugar and vanilla extract, mixing until fully incorporated.
  5. In a separate bowl, whip the heavy cream until stiff peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until well combined.
  7. Spoon the cheesecake mixture evenly over the prepared crusts in the muffin tin.
  8. Drizzle caramel sauce over the top of each cheesecake and sprinkle with chopped pecans.
  9. Refrigerate for at least 4 hours or until set.
  10. Before serving, drizzle with additional chocolate sauce and caramel sauce.

Notes

  • For a chocolate crust, substitute half of the graham cracker crumbs with chocolate cookie crumbs.
  • Add a layer of melted chocolate on top of the cheesecake before adding the caramel and pecans for an extra chocolatey treat.
