A healthy and delicious No-Flour Apple Oat Cake made with wholesome ingredients.
Ingredients
- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1/4 cup vegetable oil
- 2 large eggs
- 2 cups peeled and diced apples (about 2 medium apples)
- 1/2 cup chopped walnuts or pecans (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt. Mix well.
- In another bowl, whisk together the honey (or maple syrup), applesauce, vegetable oil, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the diced apples and nuts (if using) until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For added flavor, try mixing in a teaspoon of nutmeg or a handful of raisins or dried cranberries.
- Substitute the apples with other fruits like pears or peaches for a different twist on this cake.
