Ingredients
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/2 cup honey or maple syrup
- 1/2 cup chopped nuts (such as walnuts, almonds, or pecans)
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, almond butter, and honey or maple syrup. Stir until well mixed.
- Add the chopped nuts, pumpkin seeds, sunflower seeds, mini chocolate chips (if using), vanilla extract, cinnamon, and salt to the bowl. Mix until all ingredients are evenly combined.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the back of a spoon or your fingers.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
