Ingredients

  • 1 ½ cups sweetened shredded coconut
  • 1 ½ cups whole milk
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • ¼ teaspoon salt
  • 4 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 pre-baked 9-inch pie crust
  • Whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F. Spread the shredded coconut on a baking sheet and toast in the oven for about 5-7 minutes, stirring occasionally, until golden brown. Remove and let cool.
  2. In a medium saucepan, combine the whole milk, heavy cream, sugar, cornstarch, and salt. Whisk together until smooth and well combined.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble, about 5-7 minutes.
  4. In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs. Then, pour the egg yolk mixture back into the saucepan.
  5. Continue to cook for another 2-3 minutes, stirring constantly, until the filling is thick and creamy. Remove from heat and stir in the butter, vanilla extract, and toasted coconut (reserve a small amount for garnish).
  6. Pour the coconut cream filling into the pre-baked pie crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or until set.
  7. Once set, top with whipped cream and sprinkle the reserved toasted coconut on top before serving.

Notes

  • For a chocolate twist, add ¼ cup of cocoa powder to the filling before cooking.
