A classic recipe for Old-Fashioned Coconut Cream Pie, featuring a creamy coconut filling in a flaky crust, topped with whipped cream.
Ingredients
- 1 ½ cups sweetened shredded coconut
- 1 ½ cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- ¼ cup cornstarch
- ¼ teaspoon salt
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 pre-baked 9-inch pie crust
- Whipped cream for topping (optional)
Instructions
- Preheat your oven to 350°F. Spread the shredded coconut on a baking sheet and toast in the oven for about 5-7 minutes, stirring occasionally, until golden brown. Remove and let cool.
- In a medium saucepan, combine the whole milk, heavy cream, sugar, cornstarch, and salt. Whisk together until smooth and well combined.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble, about 5-7 minutes.
- In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the egg yolks, whisking constantly to temper the eggs. Then, pour the egg yolk mixture back into the saucepan.
- Continue to cook for another 2-3 minutes, stirring constantly, until the filling is thick and creamy. Remove from heat and stir in the butter, vanilla extract, and toasted coconut (reserve a small amount for garnish).
- Pour the coconut cream filling into the pre-baked pie crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4 hours or until set.
- Once set, top with whipped cream and sprinkle the reserved toasted coconut on top before serving.
Notes
- For a chocolate twist, add ¼ cup of cocoa powder to the filling before cooking.
- Substitute almond extract for vanilla for a different flavor profile.
