1 lb lean ground beef
1 cup long-grain white rice
1 medium onion, diced
1 bell pepper, diced
2 cloves garlic, minced
2 cups beef broth
1 can (14.5 oz) diced tomatoes
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon dried oregano
Salt and pepper to taste
Optional: 1 cup shredded cheddar cheese for topping


Instructions

  • Brown the Beef:

    • Heat a large skillet over medium-high heat. Add olive oil and ground beef.
    • Break apart the beef as it cooks and season with salt and pepper.
  • Sauté the Veggies:

    • Once the beef is browned, add the diced onions, bell peppers, and minced garlic.
    • Cook until the vegetables are softened and fragrant (about 3-4 minutes).
  • Add Seasonings:
