A delicious and easy one-pan recipe featuring garlic roasted baby potatoes and asparagus, perfect for a quick dinner.
Ingredients
- 2 pounds baby potatoes
- 1 pound asparagus, trimmed and cut into 2-inch pieces
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
- 1 lemon, zested and juiced
- Parmesan cheese, for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, salt, black pepper, and thyme. Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a large baking sheet. Roast in the preheated oven for 20 minutes.
- After 20 minutes, remove the baking sheet from the oven and add the asparagus pieces. Drizzle with lemon juice and zest, then toss everything together.
- Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are tender and golden brown and the asparagus is bright green and tender.
- Remove from the oven and let cool for a few minutes before serving. Sprinkle with Parmesan cheese, if desired.
Notes
- For added flavor, try marinating the potatoes in the olive oil and garlic mixture for 30 minutes before roasting.
- Substitute the asparagus with green beans or broccoli for a different vegetable option.
