Description

A delicious and easy one-pan recipe featuring garlic roasted baby potatoes and asparagus, perfect for a quick dinner.


Ingredients

  • 2 pounds baby potatoes
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1 lemon, zested and juiced
  • Parmesan cheese, for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, salt, black pepper, and thyme. Toss until the potatoes are well coated.
  3. Spread the potatoes in a single layer on a large baking sheet. Roast in the preheated oven for 20 minutes.
  4. After 20 minutes, remove the baking sheet from the oven and add the asparagus pieces. Drizzle with lemon juice and zest, then toss everything together.
  5. Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are tender and golden brown and the asparagus is bright green and tender.
  6. Remove from the oven and let cool for a few minutes before serving. Sprinkle with Parmesan cheese, if desired.

  • For added flavor, try marinating the potatoes in the olive oil and garlic mixture for 30 minutes before roasting.
