Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 pound ground beef
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 8 ounces cream cheese, cubed
  • 1 cup shredded provolone cheese
  • 4 slices of sourdough bread
  • 1 cup shredded mozzarella cheese
  • 4 slices cooked bacon, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, red and green bell peppers, and garlic. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the sliced mushrooms and ground beef to the pot. Cook until the beef is browned, breaking it up with a spoon, about 6-8 minutes. Drain any excess fat.
  3. Pour in the beef broth, Worcestershire sauce, and Italian seasoning. Season with salt and pepper. Bring to a simmer and cook for 10 minutes.
  4. Stir in the cream cheese until melted and well combined. Add the provolone cheese and mix until the soup is creamy and cheesy.
  5. While the soup is simmering, preheat the oven to 400°F. Place the sourdough bread on a baking sheet and top each slice with mozzarella cheese. Bake for 8-10 minutes until the cheese is bubbly and golden.
  6. Serve the soup hot, topped with crumbled bacon and chopped parsley, alongside the cheesy toast.
