Ingredients

  • 2 large yellow onions, sliced into rings
  • 4 tablespoons unsalted butter, melted
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese (optional)
  • Fresh parsley, chopped for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced onions with melted butter, thyme, rosemary, garlic powder, salt, and pepper. Toss until the onions are well coated.
  3. Transfer the onion mixture to a greased baking dish, spreading it evenly.
  4. If using, sprinkle the shredded mozzarella cheese on top of the onions.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes, or until the onions are tender and slightly caramelized.
  7. Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
