Ingredients

  • 2 cups cooked white rice (preferably day-old)
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 cup frozen peas and carrots mix
  • 2 green onions, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions

  1. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant, then add the frozen peas and carrots. Cook for another 2-3 minutes until the vegetables are heated through.
  3. Add the cooked rice to the skillet, breaking up any clumps. Stir well to combine with the vegetables.
  4. Pour in the soy sauce, orange juice, and orange zest. Stir everything together, ensuring the rice is evenly coated with the sauce. Cook for an additional 3-4 minutes, allowing the rice to absorb the flavors.
  5. Return the cooked chicken to the skillet and drizzle with sesame oil. Toss everything together until heated through. Adjust seasoning with more salt and pepper if needed.
  6. Serve hot, garnished with sliced green onions and sesame seeds if desired.

  • For a vegetarian option, substitute the chicken with tofu or tempeh and use vegetable broth instead of chicken broth for added flavor.
