Ingredients
- 2 cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 cup orange juice
- 1 tablespoon orange zest
- 1 (3.4-ounce) package instant vanilla pudding mix
- 2 cups heavy cream
- ¼ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup orange segments (fresh or canned, drained)
- 1 cup whipped topping (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
- Stir in the orange juice and orange zest until well combined. Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then poke holes all over the top using a fork or skewer.
- In a separate bowl, prepare the instant vanilla pudding mix according to package instructions. Pour the pudding over the cooled cake, making sure it fills the holes.
- Cover the cake and refrigerate for at least 2 hours to allow the pudding to set.
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the top of the cake.
- Garnish with orange segments and whipped topping if desired. Slice and serve chilled.
