Description

A delicious and refreshing Orange Creamsicle Poke Cake that combines the flavors of orange and vanilla in a moist cake, perfect for summer gatherings.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1 (3.4-ounce) package instant vanilla pudding mix
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup orange segments (fresh or canned, drained)
  • 1 cup whipped topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract. Beat on medium speed for about 2 minutes until smooth.
  3. Stir in the orange juice and orange zest until well combined. Pour the batter into the prepared baking pan and spread evenly.
  4. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then poke holes all over the top using a fork or skewer.
  5. In a separate bowl, prepare the instant vanilla pudding mix according to package instructions. Pour the pudding over the cooled cake, making sure it fills the holes.
  6. Cover the cake and refrigerate for at least 2 hours to allow the pudding to set.
  7. In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Spread the whipped cream over the top of the cake.
  8. Garnish with orange segments and whipped topping if desired. Slice and serve chilled.

Notes

  • For a richer flavor, try adding a teaspoon of orange extract to the batter.
  • You can substitute the heavy cream with a store-bought whipped topping for a quicker option.
  • For a fun twist, add chocolate chips to the batter for a chocolate-orange combination.
