Description

Ingredients

  • 3/4 cup unsalted butter, melted and cooled
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon cornstarch
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 3/4 cup semisweet chocolate chips
  • 1214 Oreo cookies, chopped

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper and secure with metal binder clips.
  2. Mix the Wet Ingredients: Melt the butter and let it cool slightly. In a mixing bowl, whisk together the light brown sugar and granulated sugar with the melted butter until smooth and slightly voluminous.
  3. Add Eggs and Vanilla: Add the egg and whisk vigorously for about 20 seconds, then mix in the egg yolk and continue whisking. Stir in the vanilla extract.
  4. Incorporate Dry Ingredients: Using a rubber spatula, gently fold in the flour, cornstarch, baking soda, and salt until just combined.
  5. Fold in Mix-Ins: Fold in the chopped Oreos and chocolate chips, ensuring even distribution.
  6. Bake to Perfection: Pour the batter into the prepared pan and spread it evenly. Sprinkle extra chocolate chips and Oreo chunks on top for a decorative touch. Bake for 30-35 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs.
  7. Cool and Slice: Let the blondies cool completely in the pan before slicing into squares.
