Ingredients

  • 1 ½ cups Oreo cookie crumbs
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped Oreo cookies (about 10 cookies)
  • ½ cup sour cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, combine the Oreo cookie crumbs and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the granulated sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Gently fold in the chopped Oreo cookies and sour cream until just combined.
  5. Pour the cheesecake mixture over the crust in the baking dish, spreading it evenly. Bake for 30-35 minutes, or until the edges are set and the center is slightly jiggly.
  6. Remove from the oven and let cool at room temperature for about 30 minutes. Then, refrigerate for at least 4 hours, or overnight, to set completely.
  7. Once chilled, lift the cheesecake out of the pan using the parchment paper overhang. Cut into bars and dust with powdered sugar before serving.
