Ingredients
- 24 Oreo cookies, crushed
- 5 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup heavy cream
- 8 Oreo cookies, chopped
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 325°F and grease a 9-inch springform pan.
- In a medium bowl, combine the crushed Oreo cookies and melted butter. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the sugar and vanilla extract, mixing until well combined.
- Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
- Stir in the sour cream and heavy cream until smooth. Gently fold in the chopped Oreo cookies.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven and let it cool to room temperature, then refrigerate for at least 4 hours or overnight.
- For the fudge topping, combine the chocolate chips and heavy cream in a microwave-safe bowl. Heat in the microwave in 30-second intervals, stirring in between, until smooth and fully melted.
- Allow to cool slightly before pouring over the chilled cheesecake.
- Slice and serve chilled.
Notes
- For a more intense chocolate flavor, add cocoa powder to the cheesecake filling (about 1/4 cup) before mixing in the eggs.
- Top the cheesecake with whipped cream and additional crushed Oreos for a decorative finish.
