Ingredients

  • 2 cups finely shredded green cabbage
  • 1 cup grated carrots
  • 1/2 cup chopped green onions
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil
  • Cooking spray

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly spray it with cooking spray.
  2. In a large mixing bowl, combine the shredded cabbage, grated carrots, and chopped green onions.
  3. Add the flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, black pepper, and paprika to the vegetable mixture. Stir until all ingredients are well combined.
  4. Using a spoon or your hands, form the mixture into small patties, about 2-3 inches in diameter. Place the patties on the prepared baking sheet, leaving some space between each one.
  5. Drizzle the olive oil over the fritters or lightly spray them with cooking spray for a crispier texture.
  6. Bake in the preheated oven for 20-25 minutes, flipping the fritters halfway through, until they are golden brown and crispy.
  7. Remove from the oven and let cool for a few minutes before serving.
