Ingredients
- 2 cups finely shredded green cabbage
- 1 cup grated carrots
- 1/2 cup chopped green onions
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil
- Cooking spray
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper and lightly spray it with cooking spray.
- In a large mixing bowl, combine the shredded cabbage, grated carrots, and chopped green onions.
- Add the flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, black pepper, and paprika to the vegetable mixture. Stir until all ingredients are well combined.
- Using a spoon or your hands, form the mixture into small patties, about 2-3 inches in diameter. Place the patties on the prepared baking sheet, leaving some space between each one.
- Drizzle the olive oil over the fritters or lightly spray them with cooking spray for a crispier texture.
- Bake in the preheated oven for 20-25 minutes, flipping the fritters halfway through, until they are golden brown and crispy.
- Remove from the oven and let cool for a few minutes before serving.
