Description

Ingredients

  • 3 to 4 pounds pork butt (also known as pork shoulder)
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon cayenne pepper (optional for heat)
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 300°F.
  2. Pat the pork butt dry with paper towels.
  3. In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, oregano, and cayenne pepper.
  4. Rub the spice mixture all over the pork butt, ensuring it’s evenly coated.
  5. In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat.
  6. Once hot, sear the pork butt on all sides until browned, about 3-4 minutes per side.
  7. Once seared, remove the pork from the skillet and set aside.
  8. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom.
  9. Return the pork butt to the skillet, fat side up.
  10. Cover the skillet tightly with aluminum foil or a lid and place it in the preheated oven.
  11. Roast for 4 to 5 hours, or until the pork is tender and easily pulls apart with a fork.
  12. Check the internal temperature; it should reach at least 195°F for optimal tenderness.
  13. Remove the pork from the oven and let it rest for 20-30 minutes before shredding or slicing.
  14. Serve with your favorite sides.
