A simple and delicious recipe for oven roasted pork butt that results in tender, flavorful meat.
Ingredients
- 3 to 4 pounds pork butt (also known as pork shoulder)
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon cayenne pepper (optional for heat)
- 1 cup chicken broth
Instructions
- Preheat your oven to 300°F.
- Pat the pork butt dry with paper towels.
- In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, thyme, oregano, and cayenne pepper.
- Rub the spice mixture all over the pork butt, ensuring it’s evenly coated.
- In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat.
- Once hot, sear the pork butt on all sides until browned, about 3-4 minutes per side.
- Once seared, remove the pork from the skillet and set aside.
- Pour the chicken broth into the skillet, scraping up any browned bits from the bottom.
- Return the pork butt to the skillet, fat side up.
- Cover the skillet tightly with aluminum foil or a lid and place it in the preheated oven.
- Roast for 4 to 5 hours, or until the pork is tender and easily pulls apart with a fork.
- Check the internal temperature; it should reach at least 195°F for optimal tenderness.
- Remove the pork from the oven and let it rest for 20-30 minutes before shredding or slicing.
- Serve with your favorite sides.

- For added flavor, consider marinating the pork butt overnight in the spice mixture and a bit of apple cider vinegar.
- You can also serve the shredded pork on buns with coleslaw for a delicious pulled pork sandwich.
