Ingredients
- 2 pounds baby potatoes, halved
- 1 pound smoked sausage, sliced into 1-inch pieces
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium onion, sliced
- 4 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved baby potatoes, sliced sausage, chopped bell peppers, and sliced onion.
- Drizzle the olive oil over the mixture and sprinkle with garlic powder, paprika, oregano, salt, and pepper. Toss everything together until well coated.
- Spread the mixture in a single layer on a large baking sheet.
- Roast in the preheated oven for 30-35 minutes, stirring halfway through, until the potatoes are tender and golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.

- For added flavor, try using Italian sausage or chicken sausage instead of smoked sausage.
