  • 2 pounds baby potatoes, halved
  • 1 pound smoked sausage, sliced into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium onion, sliced
  • 4 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, sliced sausage, chopped bell peppers, and sliced onion.
  3. Drizzle the olive oil over the mixture and sprinkle with garlic powder, paprika, oregano, salt, and pepper. Toss everything together until well coated.
