Description
A delicious Pan-Seared Cod served in a flavorful White Wine Tomato Basil Sauce, perfect for a quick and healthy meal.
Ingredients
- 1 pound cod fillets
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/2 cup dry white wine
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 1/4 cup fresh basil leaves, chopped
- 1 tablespoon lemon juice
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the cod fillets with salt and pepper.
- Once the oil is hot, add the cod fillets and sear for about 3-4 minutes on each side until golden brown and cooked through. Remove the cod from the skillet and set aside.
- In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 30 seconds until fragrant.
- Pour in the diced tomatoes (with juice) and white wine. Stir in the oregano, red pepper flakes (if using), and season with salt and pepper.
- Bring the mixture to a simmer and let it cook for about 5-7 minutes, allowing the sauce to thicken slightly.
- Return the cod fillets to the skillet and spoon the sauce over them. Cook for an additional 2-3 minutes to heat the fish through.
- Remove from heat and stir in the fresh basil and lemon juice.
- Serve immediately, spooning the sauce over the cod.
Notes
- For a creamier sauce, stir in 1/4 cup of heavy cream just before serving.
- Serve over cooked pasta or rice to make it a heartier meal.
