Description

A delicious Pan-Seared Cod served in a flavorful White Wine Tomato Basil Sauce, perfect for a quick and healthy meal.


Ingredients

  • 1 pound cod fillets
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup dry white wine
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the cod fillets with salt and pepper.
  3. Once the oil is hot, add the cod fillets and sear for about 3-4 minutes on each side until golden brown and cooked through. Remove the cod from the skillet and set aside.
  4. In the same skillet, add the diced onion and sauté for about 3-4 minutes until translucent.
  5. Add the minced garlic and cook for an additional 30 seconds until fragrant.
  6. Pour in the diced tomatoes (with juice) and white wine. Stir in the oregano, red pepper flakes (if using), and season with salt and pepper.
  7. Bring the mixture to a simmer and let it cook for about 5-7 minutes, allowing the sauce to thicken slightly.
  8. Return the cod fillets to the skillet and spoon the sauce over them. Cook for an additional 2-3 minutes to heat the fish through.
  9. Remove from heat and stir in the fresh basil and lemon juice.
  10. Serve immediately, spooning the sauce over the cod.

Notes

  • For a creamier sauce, stir in 1/4 cup of heavy cream just before serving.
  • Serve over cooked pasta or rice to make it a heartier meal.
