Parmesan Smashed Potatoes are a crispy and flavorful side dish made with baby potatoes, Parmesan cheese, and garlic, perfect for any meal.
Ingredients
- 2 pounds baby potatoes
- 1/2 cup grated Parmesan cheese
- 1/4 cup unsalted butter, melted
- 1/4 cup whole milk
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Place the baby potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook the potatoes for about 15-20 minutes, or until they are fork-tender.
- Drain the potatoes and let them cool slightly.
- On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with the bottom of a glass or a potato masher until they are about 1/2 inch thick.
- In a small bowl, mix together the melted butter, minced garlic, salt, and pepper. Brush this mixture over the smashed potatoes.
- Sprinkle the grated Parmesan cheese evenly over the potatoes.
- Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden and crispy.
- Remove from the oven and garnish with chopped fresh parsley before serving.
Notes
- For extra flavor, add a teaspoon of smoked paprika or chili flakes to the butter mixture before brushing it on the potatoes.
- Try using different cheeses, such as cheddar or feta, for a unique twist on the classic Parmesan flavor.
