Description

Parmesan Smashed Potatoes are a crispy and flavorful side dish made with baby potatoes, Parmesan cheese, and garlic, perfect for any meal.


Ingredients

  • 2 pounds baby potatoes
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter, melted
  • 1/4 cup whole milk
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the baby potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook the potatoes for about 15-20 minutes, or until they are fork-tender.
  3. Drain the potatoes and let them cool slightly.
  4. On a baking sheet lined with parchment paper, place the potatoes and gently smash each one with the bottom of a glass or a potato masher until they are about 1/2 inch thick.
  5. In a small bowl, mix together the melted butter, minced garlic, salt, and pepper. Brush this mixture over the smashed potatoes.
  6. Sprinkle the grated Parmesan cheese evenly over the potatoes.
  7. Bake in the preheated oven for 20-25 minutes, or until the potatoes are golden and crispy.
  8. Remove from the oven and garnish with chopped fresh parsley before serving.
