Description

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 can (15 ounces) sliced peaches in syrup, drained and chopped
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup brown sugar

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup granulated sugar and vanilla extract, mixing until well combined.
  4. Add the eggs one at a time, mixing well after each addition. Then, mix in the sour cream until smooth and creamy.
  5. Gently fold in the chopped peaches, ground cinnamon, and ground nutmeg until evenly distributed.
  6. Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
  7. In a small bowl, combine the brown sugar and a pinch of cinnamon. Sprinkle this mixture evenly over the top of the cheesecake.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
  9. Turn off the oven and crack the door open, allowing the cheesecake to cool in the oven for 1 hour.
  10. Remove from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving.
