- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups fresh peaches, peeled and diced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup rolled oats
- 1/2 cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the diced peaches, cinnamon, nutmeg, oats, and chopped pecans if using.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a twist, try substituting the peaches with fresh blueberries or diced apples.
- You can drizzle a simple glaze made from powdered sugar and milk over the cooled cookies for added sweetness.
- For a gluten-free option, use a 1:1 gluten-free flour blend in place of all-purpose flour.
