Description

A delicious Peach Crumble Cheesecake topped with a rich caramel drizzle, perfect for dessert lovers.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches, peeled and diced
  • ½ teaspoon cinnamon
  • ½ cup rolled oats
  • ¼ cup brown sugar
  • ¼ cup all-purpose flour
  • ¼ cup chopped pecans (optional)
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 325°F.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese and ¾ cup sugar together until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Gently fold in the diced peaches and cinnamon.
  7. Pour the cream cheese mixture over the cooled crust in the springform pan.
  8. In a separate bowl, combine the rolled oats, brown sugar, flour, and chopped pecans (if using). Sprinkle this crumble mixture evenly over the cheesecake layer.
  9. Bake for 45-50 minutes, or until the center is set and the edges are lightly golden.
  10. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
  11. Refrigerate for at least 4 hours or overnight for best results.
  12. Before serving, drizzle the caramel sauce over the top of the cheesecake. Slice and enjoy!
