A delicious Peach Crumble Cheesecake topped with a rich caramel drizzle, perfect for dessert lovers.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons sugar
- 2 (8-ounce) packages cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh peaches, peeled and diced
- ½ teaspoon cinnamon
- ½ cup rolled oats
- ¼ cup brown sugar
- ¼ cup all-purpose flour
- ¼ cup chopped pecans (optional)
- ½ cup caramel sauce (store-bought or homemade)
Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine the graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
- Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese and ¾ cup sugar together until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gently fold in the diced peaches and cinnamon.
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- In a separate bowl, combine the rolled oats, brown sugar, flour, and chopped pecans (if using). Sprinkle this crumble mixture evenly over the cheesecake layer.
- Bake for 45-50 minutes, or until the center is set and the edges are lightly golden.
- Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.
- Refrigerate for at least 4 hours or overnight for best results.
- Before serving, drizzle the caramel sauce over the top of the cheesecake. Slice and enjoy!
Notes
- For a lighter version, substitute low-fat cream cheese and use a sugar substitute.
- Consider adding a pinch of nutmeg to the peach mixture for enhanced flavor.
- Serving with a scoop of vanilla ice cream on the side is recommended.
