Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup creamy peanut butter
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 8 slices of bread (thick-cut, such as Texas toast or brioche)
  • Butter or oil for cooking
  • Maple syrup for serving
  • Chopped peanuts for garnish (optional)

Instructions

  1. In a large mixing bowl, whisk together the eggs, milk, peanut butter, brown sugar, vanilla extract, and ground cinnamon until well combined and smooth.
  2. Preheat a large skillet or griddle over medium heat and add a little butter or oil to coat the surface.
  3. Dip each slice of bread into the peanut butter mixture, allowing it to soak for a few seconds on each side.
  4. Place the soaked bread slices onto the hot skillet or griddle. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
