Ingredients
- 2 large eggs
- 1/2 cup milk
- 1/4 cup creamy peanut butter
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 8 slices of bread (thick-cut, such as Texas toast or brioche)
- Butter or oil for cooking
- Maple syrup for serving
- Chopped peanuts for garnish (optional)
Instructions
- In a large mixing bowl, whisk together the eggs, milk, peanut butter, brown sugar, vanilla extract, and ground cinnamon until well combined and smooth.
- Preheat a large skillet or griddle over medium heat and add a little butter or oil to coat the surface.
- Dip each slice of bread into the peanut butter mixture, allowing it to soak for a few seconds on each side.
- Place the soaked bread slices onto the hot skillet or griddle. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
- Remove the French toast from the skillet and keep warm while you cook the remaining slices.
- Serve warm, drizzled with maple syrup and topped with chopped peanuts if desired.

- For a chocolate twist, add a tablespoon of cocoa powder to the egg mixture or serve with chocolate syrup.
