Ingredients

  • 1 cup cottage cheese
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 cup crushed graham crackers
  • 1/4 cup mini chocolate chips (optional)
  • Fresh fruit or chocolate shavings for topping (optional)

Instructions

  1. In a blender or food processor, combine the cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, and cinnamon. Blend until smooth and creamy.
  2. In a separate bowl, mix the crushed graham crackers with a tablespoon of melted butter (optional) to create a crumbly crust.
  3. In serving cups or bowls, layer the graham cracker mixture at the bottom.
  4. Spoon the peanut butter cottage cheese mixture on top of the graham cracker layer, filling each cup to the top.
