Ingredients
- 1 cup cottage cheese
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 cup crushed graham crackers
- 1/4 cup mini chocolate chips (optional)
- Fresh fruit or chocolate shavings for topping (optional)
Instructions
- In a blender or food processor, combine the cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, and cinnamon. Blend until smooth and creamy.
- In a separate bowl, mix the crushed graham crackers with a tablespoon of melted butter (optional) to create a crumbly crust.
- In serving cups or bowls, layer the graham cracker mixture at the bottom.
- Spoon the peanut butter cottage cheese mixture on top of the graham cracker layer, filling each cup to the top.
- If desired, sprinkle mini chocolate chips on top of the cheesecake mixture.
- Chill in the refrigerator for at least 1 hour before serving to allow the flavors to meld and the texture to firm up.
- Before serving, add fresh fruit or chocolate shavings on top for an extra touch.
