Description

Deliciously gooey cookie bars packed with peanut butter and chocolate flavors.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate peanut butter cups, chopped (such as Reese’s)
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, brown sugar, and peanut butter until smooth and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chopped peanut butter cups and semi-sweet chocolate chips until evenly distributed.
  7. Spread the cookie dough evenly in the prepared baking pan.
  8. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow the bars to cool in the pan for at least 15 minutes before slicing into squares.

Notes

  • For a richer flavor, try adding a pinch of sea salt on top before baking.
  • You can substitute the chocolate chips with white chocolate or butterscotch chips for a different taste.
