Description

A delicious and creamy Peanut Butter and Jelly Cheesecake that combines the classic flavors of peanut butter and jelly in a rich dessert.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup grape jelly (or your choice of jelly)
  • ½ cup heavy cream
  • ¼ cup chopped peanuts (optional, for garnish)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan with cooking spray or butter.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the peanut butter, powdered sugar, and vanilla extract, mixing until fully incorporated.
  4. Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.
  5. Pour the cheesecake batter over the cooled crust in the springform pan.
  6. Drop spoonfuls of grape jelly over the cheesecake batter and use a knife or skewer to swirl it gently into the batter for a marbled effect.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours, or overnight for best results.
  9. Before serving, whip the heavy cream until soft peaks form and spread it over the top of the cheesecake. Garnish with chopped peanuts if desired.

Notes

  • For a chocolate twist, add ½ cup of cocoa powder to the cheesecake batter for a chocolate peanut butter cheesecake.
