Description

A delicious Pecan Caramel Pumpkin Cheesecake that combines the flavors of pumpkin, caramel, and pecans for a delightful dessert.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1 (8-ounce) package cream cheese, softened
  • 1 cup canned pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 3 large eggs
  • 1 cup pecans, chopped
  • 1/2 cup caramel sauce

Instructions

  1. Preheat the oven to 325°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, powdered sugar, vanilla extract, cinnamon, nutmeg, and ginger. Mix until fully combined.
  4. Add the eggs one at a time, mixing well after each addition until smooth and creamy.
  5. Fold in the chopped pecans, reserving a few for garnish if desired. Pour the pumpkin cheesecake filling over the crust in the springform pan.
  6. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional 30 minutes.
  7. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
  8. Before serving, drizzle caramel sauce over the top and garnish with reserved pecans.
