Ingredients
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup powdered sugar
- 8 ounces cream cheese, softened
- 1 teaspoon vanilla extract
- 2 cups whipped topping (like Cool Whip)
- 1 cup pecans, chopped
- 1 cup brown sugar
- 1/2 cup corn syrup
- 3 large eggs
- 1 teaspoon vanilla extract (for the filling)
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust. Bake for 10 minutes, then let it cool completely.
- In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Fold in the whipped topping until well combined. Spread this mixture evenly over the cooled crust.
- In another bowl, mix together the brown sugar, corn syrup, eggs, 1 teaspoon of vanilla extract, and salt until well blended. Stir in the chopped pecans.
- Pour the pecan mixture over the cream cheese layer in the baking dish.
- Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. Allow to cool at room temperature for at least 2 hours, then refrigerate for at least 2 more hours before serving.
- Cut into squares and serve chilled or at room temperature.
Notes
- For a chocolate twist, add 1/2 cup of mini chocolate chips to the cream cheese layer.
- To make it even more decadent, drizzle melted chocolate or caramel sauce over the top before serving.
