Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 2 cups whipped topping (like Cool Whip)
  • 1 cup pecans, chopped
  • 1 cup brown sugar
  • 1/2 cup corn syrup
  • 3 large eggs
  • 1 teaspoon vanilla extract (for the filling)
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9×13-inch baking dish to form the crust. Bake for 10 minutes, then let it cool completely.
  2. In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Fold in the whipped topping until well combined. Spread this mixture evenly over the cooled crust.
  3. In another bowl, mix together the brown sugar, corn syrup, eggs, 1 teaspoon of vanilla extract, and salt until well blended. Stir in the chopped pecans.
  4. Pour the pecan mixture over the cream cheese layer in the baking dish.
  5. Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown. Allow to cool at room temperature for at least 2 hours, then refrigerate for at least 2 more hours before serving.
