Description

Ingredients

  • 2 cups fresh pineapple chunks (or canned, drained)
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (optional)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the pineapple chunks and brown sugar. Spread the mixture evenly in the bottom of the prepared baking dish.
  3. In another bowl, whisk together the melted butter, flour, baking powder, salt, cinnamon, milk, and vanilla extract until smooth.
  4. Pour the batter over the pineapple mixture in the baking dish, spreading it evenly.
  5. If using, sprinkle the shredded coconut and chopped nuts on top of the batter.
  6. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  7. Allow to cool for about 10 minutes before serving. Serve warm or at room temperature.

Notes

  • For a tropical twist, add a teaspoon of almond extract to the batter.
