A delightful and sweet dessert made with fresh pineapple chunks, brown sugar, and a buttery batter, perfect for any occasion.
Ingredients
- 2 cups fresh pineapple chunks (or canned, drained)
- 1 cup brown sugar
- 1/2 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (optional)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, combine the pineapple chunks and brown sugar. Spread the mixture evenly in the bottom of the prepared baking dish.
- In another bowl, whisk together the melted butter, flour, baking powder, salt, cinnamon, milk, and vanilla extract until smooth.
- Pour the batter over the pineapple mixture in the baking dish, spreading it evenly.
- If using, sprinkle the shredded coconut and chopped nuts on top of the batter.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool for about 10 minutes before serving. Serve warm or at room temperature.
Notes
- For a tropical twist, add a teaspoon of almond extract to the batter.
- Serve with a scoop of vanilla ice cream or whipped cream for an extra indulgent dessert.
