Ingredients

  • 1 cup crushed pineapple, drained
  • 1 cup powdered sugar
  • 1 cup shredded coconut
  • 1 cup chopped pecans or walnuts
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup chopped maraschino cherries (optional)
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the drained crushed pineapple, powdered sugar, shredded coconut, chopped nuts, vanilla extract, and almond extract. Mix until well combined.
  2. If using, fold in the chopped maraschino cherries and mini chocolate chips.
  3. Refrigerate the mixture for about 30 minutes to help it firm up.
  4. Once chilled, use your hands to form the mixture into small balls, about 1 inch in diameter.
  5. Roll each ball in additional shredded coconut or crushed nuts for coating, if desired.
  6. Place the finished balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour before serving.
