Pineapple Christmas Balls are a festive treat made with crushed pineapple, coconut, and nuts, perfect for holiday gatherings.
Ingredients
- 1 cup crushed pineapple, drained
- 1 cup powdered sugar
- 1 cup shredded coconut
- 1 cup chopped pecans or walnuts
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup chopped maraschino cherries (optional)
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the drained crushed pineapple, powdered sugar, shredded coconut, chopped nuts, vanilla extract, and almond extract. Mix until well combined.
- If using, fold in the chopped maraschino cherries and mini chocolate chips.
- Refrigerate the mixture for about 30 minutes to help it firm up.
- Once chilled, use your hands to form the mixture into small balls, about 1 inch in diameter.
- Roll each ball in additional shredded coconut or crushed nuts for coating, if desired.
- Place the finished balls on a baking sheet lined with parchment paper and refrigerate for at least 1 hour before serving.
Notes
- For a tropical twist, add a teaspoon of lime zest to the mixture.
- Substitute the nuts with sunflower seeds for a nut-free version.
