Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsweetened shredded coconut
  • 1 cup crushed pineapple, drained
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • For the frosting:
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 2 tablespoons heavy cream
  • ½ cup unsweetened shredded coconut, toasted (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and shredded coconut. Mix well.
  3. In another bowl, beat together the softened butter, buttermilk, eggs, vanilla extract, and coconut extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the crushed pineapple.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  7. While the cakes cool, prepare the frosting by beating the softened butter in a bowl until creamy. Gradually add the powdered sugar, vanilla extract, coconut extract, and heavy cream, mixing until smooth and fluffy.
  8. Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the top and sides of the cake.
  9. Garnish the cake with toasted shredded coconut.
